Gourmet Rice Krispie Treats with Dark Chocolate & Sea Salt

These gourmet Rice Krispie treats combine the classic chewy marshmallow and cereal base with rich dark chocolate and a sprinkle of sea salt for a perfect sweet and salty snack. Quick and easy to make, they are perfect for family gatherings, potlucks, or a cozy treat at home.

  • 6 cups (about 150 g) Rice Krispies Cereal
  • 10 oz (about 280 g) marshmallows (regular or mini-sized)
  • 4 tbsp (about 57 g) unsalted butter, softened
  • 4 oz (about 115 g) dark chocolate (70% cacao or higher), chopped or in chips
  • 1 tsp sea salt flakes
  • 1 tsp vanilla extract

Instructions

  1. Line a 9×13-inch (23×33 cm) baking dish with parchment paper or lightly grease it and set aside.
  2. In a large heavy-bottomed saucepan over low heat, melt 4 tablespoons (57 g) of unsalted butter.
  3. Add 10 ounces (280 g) of marshmallows and stir continuously with a rubber spatula until almost completely melted and smooth, about 5-7 minutes. Avoid overheating.
  4. Remove the pan from heat and stir in 1 teaspoon of vanilla extract.
  5. Quickly fold in 6 cups (150 g) of Rice Krispies cereal, coating evenly with gentle, swift motions.
  6. Transfer the mixture into the prepared pan and press firmly and evenly using parchment paper or a buttered spatula, being careful not to press too hard.
  7. Place the pan in the fridge for about 10 minutes to firm up while melting the dark chocolate.
  8. Melt 4 ounces (115 g) of chopped dark chocolate in a microwave-safe bowl in 20-second bursts, stirring between each until smooth, or use a double boiler.
  9. Remove the treats from the fridge and drizzle the melted dark chocolate evenly over the top, spreading with the back of a spoon if needed.
  10. Sprinkle 1 teaspoon of sea salt flakes over the warm chocolate.
  11. Return the pan to the fridge for 20-30 minutes until the chocolate is set solid.
  12. Cut into squares or rectangles using a sharp knife warmed under hot water and dried for cleaner cuts.

Notes

Melt butter and marshmallows slowly over low heat to avoid burning. Use fresh marshmallows for best texture. Avoid overmixing cereal to keep treats light and chewy. Chill treats before adding chocolate to keep the chocolate layer crisp. Warm knife between cuts for clean slices. For dairy-free, swap butter with coconut oil and use dairy-free chocolate and marshmallows. Gluten-free puffed rice cereal can be used instead of Rice Krispies.
