A delightful fusion of banana bread and blondies, these gooey treats are rich, chewy, and bursting with banana flavor. Perfect for cozy weekends or midweek pick-me-ups.

Ingredients

Scale
  • 2 medium-sized ripe bananas, mashed
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup brown sugar (light or dark)
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • Optional add-ins: chocolate chips, chopped walnuts, or peanut butter swirl

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, mash the ripe bananas until smooth. Stir in the melted butter, brown sugar, granulated sugar, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Be gentle to avoid overmixing.
  5. Fold in your choice of add-ins, like chocolate chips or nuts, if desired.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the blondies to cool in the pan for at least 20 minutes before lifting them out using the parchment paper. Slice into squares and enjoy!

Notes

[‘Use ripe bananas for maximum sweetness and flavor.’, ‘Avoid overmixing to keep the blondies tender.’, ‘Let the blondies cool completely before slicing for better texture.’, ‘Check for doneness by inserting a toothpick; it should come out with moist crumbs, not wet batter.’]
