Ingredients

  • 4 medium-sized Russet potatoes, scrubbed clean
  • 2 tablespoons extra virgin olive oil
  • 2 cloves fresh garlic, minced finely
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.
  2. Scrub the potatoes clean and cut them in half lengthwise. Scoop out the flesh, leaving about ¼ inch of potato attached to the skin. Save the scooped-out flesh for another recipe.
  3. In a mixing bowl, combine olive oil, minced garlic, chopped herbs, sea salt, and black pepper.
  4. Toss the potato skins in the seasoning mixture until evenly coated. Use a pastry brush for precision if desired.
  5. Place the potato skins cut-side down on the lined baking sheet, spaced out for even roasting.
  6. Bake for 20 minutes, then flip the potato skins over and bake for another 15-20 minutes until golden and crispy.
  7. Optional: Sprinkle grated Parmesan cheese over the skins in the last 5 minutes of baking for extra flavor.
  8. Remove from the oven, let cool slightly, and serve warm with your favorite dips or toppings.

Notes

Russet potatoes work best for crisp skins. Be generous with the garlic and herb seasoning for maximum flavor. Flip the potato skins halfway through roasting for even crispiness.
