Fresh Watermelon Feta Mint Salad

A refreshing and easy summer side salad combining juicy watermelon, salty feta, fresh mint, and a tangy balsamic drizzle for a perfect balance of flavors.

Ingredients

  • 4 cups seedless watermelon, cubed (about 600g)
  • 1 cup crumbled feta cheese (about 150g)
  • ¼ cup fresh mint leaves, roughly chopped (about 15g)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Freshly ground black pepper, to taste
  • Sea salt, a pinch
  • Optional: thinly sliced red onions
  • Optional: toasted pine nuts or pistachios

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into bite-sized cubes, about 1-inch pieces. Place in a large mixing bowl.
  2. Measure and crumble 1 cup (150g) of feta cheese and add to the bowl with watermelon.
  3. Rinse, pat dry, and roughly chop ¼ cup (15g) of fresh mint leaves. Add to the bowl.
  4. In a small bowl, whisk together 2 tablespoons extra virgin olive oil and 1 tablespoon balsamic vinegar. Season with a pinch of sea salt and freshly ground black pepper.
  5. Pour the dressing over the watermelon, feta, and mint mixture. Toss gently with a large spoon or salad tongs to coat evenly without crushing the watermelon.
  6. Transfer the salad to a serving platter or bowl. Optionally drizzle extra balsamic vinegar or sprinkle black pepper. Serve immediately or chill up to 30 minutes before serving.

Notes

Use ripe but firm watermelon to avoid watery salad. Chill watermelon and feta before assembly for best refreshing taste. Toss gently to keep watermelon cubes intact. Add salt sparingly as feta is salty. Serve immediately or within 24 hours refrigerated. For vegan option, omit feta and add toasted nuts.
