Fresh Star Shaped Watermelon Salad with Feta and Mint

A refreshing and playful summer salad featuring star-shaped watermelon pieces paired with salty feta and bright mint, perfect for parties and easy to prepare.

Ingredients

  • 6 cups watermelon, cut into star shapes or cubes
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped or torn
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice (about 1 lime)
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, optional

Instructions

  1. Wash the watermelon. Cut off both ends to create flat surfaces, then slice into 1/2-inch thick slabs.
  2. Use a star-shaped cookie cutter to cut out star shapes from each slab to yield about 6 cups. Alternatively, cube the watermelon into 1-inch pieces.
  3. Rinse fresh mint leaves, pat dry, and roughly chop or tear into smaller pieces to make about 1/4 cup.
  4. In a small bowl, whisk together extra virgin olive oil, fresh lime juice, sea salt, and optional black pepper to make the dressing.
  5. In a large mixing bowl, gently combine the watermelon stars, crumbled feta, and chopped mint.
  6. Drizzle the dressing over the salad and toss carefully to coat without breaking the watermelon stars.
  7. Transfer the salad to a serving platter or bowl. Garnish with extra mint leaves or feta if desired and serve immediately.

Notes

Use a ripe, seedless watermelon for best sweetness and texture. Dip the cookie cutter in warm water between cuts to prevent sticking. Assemble just before serving to keep watermelon stars crisp. If watermelon is very juicy, drain excess liquid before tossing. Cold watermelon from the fridge makes the salad more refreshing.
