Fresh Raspberry Yogurt Parfait with Crunchy Granola Layers

A quick and easy parfait featuring layers of creamy Greek yogurt, fresh raspberries, and homemade crunchy granola. Perfect for breakfast, snacks, or a healthy dessert.

  • 1 ½ cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups old-fashioned rolled oats
  • ½ cup sliced almonds
  • ¼ cup shredded unsweetened coconut (optional)
  • 3 tablespoons maple syrup or honey
  • 3 tablespoons coconut oil or melted unsalted butter
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt
  • 2 cups fresh raspberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine rolled oats, sliced almonds, shredded coconut, ground cinnamon, and sea salt. Mix well.
  3. In a small bowl, whisk together maple syrup (or honey) and melted coconut oil (or butter) until combined. Pour over the dry mixture and stir until evenly coated.
  4. Spread the granola mixture evenly on a baking sheet lined with parchment paper. Bake for 20-25 minutes, stirring halfway through to toast evenly until golden and nutty smelling.
  5. Remove granola from the oven and let it cool completely on the baking sheet.
  6. While granola cools, whisk together Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and creamy.
  7. Wash fresh raspberries gently and pat dry.
  8. Assemble the parfaits by layering yogurt, granola, and fresh raspberries in glasses or jars. Repeat layers, finishing with granola and raspberries on top.
  9. Garnish with fresh mint leaves if desired.
  10. Serve immediately or refrigerate for up to 4 hours before serving. Add final granola layer just before serving to keep it crunchy.

Notes

Let granola cool completely before scooping to maintain crunch. Stir granola halfway through baking to avoid burning. Assemble parfaits close to serving time or keep granola separate to prevent sogginess. Use room temperature yogurt for creamier texture. Granola can be stored airtight for up to two weeks.
