Fresh Lemon Herb Grilled Chicken with Zucchini Noodles

A quick and easy healthy recipe featuring juicy grilled chicken marinated in fresh lemon and herbs, served over crisp zucchini noodles for a light yet satisfying meal.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 3 tablespoons fresh lemon juice (about 12 lemons)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh dill, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 4 medium zucchinis, spiralized into noodles
  • 1 tablespoon olive oil
  • 2 cloves garlic, thinly sliced
  • Salt and pepper, to taste
  • 1 tablespoon fresh mint, chopped
  • Optional garnish: extra lemon wedges, red pepper flakes, Parmesan cheese or vegan alternative

Instructions

  1. Prepare the marinade by whisking together lemon juice, olive oil, minced garlic, oregano, parsley, dill, salt, and pepper in a large mixing bowl.
  2. Add chicken breasts to the marinade, coat evenly, cover, and refrigerate for at least 20 minutes and up to 2 hours.
  3. Spiralize zucchinis into noodles. Place noodles in a colander, sprinkle lightly with salt to draw out moisture, and let sit.
  4. Preheat grill or grill pan over medium-high heat.
  5. Remove chicken from marinade, letting excess drip off. Grill chicken for 5-7 minutes per side until internal temperature reaches 165°F (74°C).
  6. While chicken cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and cook until fragrant, about 30 seconds.
  7. Add zucchini noodles to skillet and toss gently for 2-3 minutes until just tender but still crisp. Stir in chopped mint, salt, and pepper, then remove from heat.
  8. Serve grilled chicken atop zucchini noodles. Garnish with lemon wedges, red pepper flakes, or Parmesan if desired.

Notes

Avoid overcooking zucchini noodles to keep them slightly crunchy. Marinate chicken between 20 minutes and 2 hours to prevent mushy texture. Let chicken rest 5 minutes after grilling for juicy meat. Salt zucchini noodles before cooking to draw out excess moisture and prevent sogginess.
