Delicate and refreshing tea party sandwiches featuring a creamy herb-infused cream cheese spread layered with thin cucumber slices on soft white bread. Quick and easy to prepare, perfect for light snacks or elegant gatherings.

Ingredients

Scale
  • 8 oz (225 g) soft cream cheese
  • 2 tbsp fresh dill, finely chopped
  • 2 tbsp fresh chives, snipped
  • 1 tbsp flat-leaf parsley, chopped
  • 1 large English cucumber, peeled and sliced thin
  • 12 slices white bread, crusts removed (thin-sliced sandwich bread)
  • 1 tsp lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of garlic powder or dash of smoked paprika

Instructions

  1. Prepare the Herb Cream Cheese Spread (5-7 minutes): In a medium bowl, combine softened cream cheese with chopped dill, chives, and parsley. Add lemon juice, a pinch of salt, and black pepper. Mix thoroughly until evenly distributed and spreadable. If cream cheese is too cold, microwave for 10-15 seconds to soften.
  2. Slice the Cucumber (5 minutes): Peel the cucumber if desired. Using a sharp knife or mandoline, slice into very thin rounds about 1/8 inch (3 mm) thick. Lay slices flat on paper towels and pat gently to remove excess moisture.
  3. Prepare the Bread (3 minutes): Trim off crusts for classic tea sandwich appearance. Slice bread thinly if not pre-sliced. Lightly toast if preferred, but traditionally use fresh soft bread.
  4. Assemble the Sandwiches (7-10 minutes): Spread a generous layer of herb cream cheese on each slice. Arrange cucumber slices evenly on half of the bread slices, overlapping slightly but not overcrowding. Top with remaining bread slices, cream cheese side down. Press gently to adhere.
  5. Cut and Serve (2 minutes): Cut sandwiches into small rectangles or triangles using a sharp knife. Serve immediately or cover with a damp paper towel and plastic wrap to keep fresh if making ahead.

Notes

If making sandwiches more than an hour ahead, keep refrigerated and assemble cucumber slices just before serving to maintain crispness. Pat cucumber slices dry to prevent soggy bread. For vegan or dairy-free versions, substitute cream cheese with plant-based alternatives or blended soaked cashews. Thinly sliced bread is key for delicate texture. Optional spices like garlic powder or smoked paprika add subtle twists.
