  • 4 large fresh carrots (about 500g or 1.1 lbs)
  • 1-inch piece fresh ginger root, peeled
  • Juice of 1 medium lemon
  • 1 cup (240 ml) filtered water
  • 1 tablespoon raw honey or maple syrup (optional)
  • Ice cubes (optional)

Instructions

  1. Wash and peel your carrots and ginger thoroughly under cold water using a vegetable peeler.
  2. Chop carrots and ginger into roughly 1-inch chunks to help the blender process them faster.
  3. Add chopped carrots, ginger, lemon juice, and water into your blender jar. Add raw honey or maple syrup if you want a sweeter juice.
  4. Blend on high speed for 1-2 minutes until the mixture is completely smooth with no large chunks.
  5. Strain the blended juice through a fine mesh sieve or nut milk bag into a large bowl or pitcher, pressing out every last drop.
  6. Pour the strained juice into glasses over ice cubes if desired. Stir gently and adjust sweetness with more honey if needed.
  7. Serve immediately for the freshest taste or refrigerate in an airtight container for up to 24 hours.

Notes

Use organic carrots for best taste and to avoid pesticides. Fresh ginger should be firm and fragrant. Lime juice can substitute lemon juice. Coconut water can replace filtered water for extra electrolytes. Do not blend too long to avoid heating the juice. Straining is recommended for a smooth, pulp-free juice. Store juice in airtight container and consume within 24 hours.
