  • 1/4 teaspoon freshly ground black pepper
  • Optional: a small pinch of sugar or honey

Instructions

  1. Peel the cucumber and roughly chop into chunks (about 5 minutes).
  2. Finely grate or mince the onion and squeeze out excess moisture using paper towels; set aside.
  3. In a food processor, combine chopped cucumber and softened cream cheese. Pulse until smooth and creamy, about 30 seconds to 1 minute.
  4. Transfer mixture to a mixing bowl. Stir in grated onion, chopped dill or chives, lemon juice, salt, and pepper. Adjust seasoning as needed. If too thick, add a teaspoon of cold water or lemon juice to loosen.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let flavors meld and the spread firm up.
  6. While chilling, slice another cucumber into 1/4-inch (6 mm) rounds for serving and arrange on a platter.
  7. Just before serving, spoon or pipe the Benedictine spread onto each cucumber round and garnish with a sprig of dill or fresh herbs.
