  • 1/4 cup toasted walnuts or pecans
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Place the arugula in a large salad bowl. Add the thinly sliced apples, crumbled blue cheese, and toasted nuts.
  2. In a small mixing bowl, whisk together olive oil, Dijon mustard, honey, and apple cider vinegar until smooth. Season with salt and pepper to taste.
  3. Drizzle the dressing over the salad ingredients. Use tongs or clean hands to gently toss everything until evenly coated.
  4. Transfer the salad to individual plates or a serving platter. Sprinkle extra blue cheese or nuts on top for presentation, if desired.

Notes
