Instructions

  1. Prep your veggies: finely dice bell peppers and red onion, halve cherry tomatoes, and roughly chop spinach and herbs (about 5 minutes).
  2. Beat the eggs: crack 3 large eggs into a mixing bowl, add 2 tablespoons milk, salt, and pepper. Whisk vigorously until light, pale yellow, and slightly frothy (1-2 minutes).
  3. Sauté the veggies: heat 1 tablespoon olive oil or butter in a non-stick skillet over medium heat. Cook onions and bell peppers for 2-3 minutes until softened. Add cherry tomatoes and spinach, cook another minute until spinach wilts but veggies retain some bite.
