  • Bone-in smoked ham (about 8-10 lbs), spiral-cut recommended
  • 1 cup fresh pineapple juice (or canned 100% pineapple juice)
  • 1 cup pineapple chunks, fresh or canned, drained
  • 1 cup packed brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves (optional)
  • About 20 whole cloves
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove any plastic or netting from the ham, then score the surface in a diamond pattern about 1/4 inch deep. Stud the intersections with whole cloves.
  3. Place the ham on a roasting rack inside your pan, fat side up.
  4. In a medium bowl, whisk together pineapple juice, brown sugar, Dijon mustard, honey, apple cider vinegar, cinnamon, and ground cloves until smooth.
  5. Brush the ham generously with about half of the glaze, covering all surfaces. Reserve the rest for basting.
  6. Cover the ham loosely with foil and bake for approximately 1 hour and 30 minutes (about 15 minutes per pound).
  7. Every 20 minutes, remove the foil and baste the ham with more glaze.
  8. For the last 20 minutes, remove the foil completely to let the glaze thicken and caramelize, watching carefully to prevent burning.
  9. Check the internal temperature with a meat thermometer; it should read 140°F (60°C).
  10. Remove the ham from the oven and let it rest for 10-15 minutes before carving.

Notes

If glaze is too thick to brush, thin with a splash of pineapple juice. Use a meat thermometer to avoid overcooking. Rest ham after baking to keep it juicy. For a slow cooker adaptation, cook on low for 4-6 hours, basting occasionally. Watch glaze carefully during final caramelization to prevent burning.
