These Flavorful New Year’s Eve Nachos are an easy, quick, and delicious party snack featuring seasoned ground beef, melted cheese, fresh jalapeños, and vibrant toppings. Perfect for gatherings and game nights, they deliver a nostalgic comfort food experience.

  • Tortilla chips (sturdy, thick-cut, about 10-12 oz)
  • 1 pound ground beef (80/20 preferred)
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups shredded sharp cheddar or Mexican blend cheese (about 7 oz)
  • 12 jalapeños, thinly sliced (optional)
  • 1 medium tomato, diced
  • 2 stalks green onions, thinly sliced
  • A small handful cilantro, chopped
  • 1 cup black beans, rinsed and drained (optional)
  • ½ cup homemade or store-bought salsa
  • Sour cream for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it up as it browns.
  3. When beef is halfway cooked, add finely chopped onion and minced garlic. Stir and cook until onions are translucent and beef is fully browned.
  4. Season the beef with chili powder, cumin, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
  5. Spread a generous layer of tortilla chips on a large rimmed baking sheet.
  6. Evenly distribute the cooked beef over the chips.
  7. Sprinkle shredded cheese evenly over the beef and chips.
  8. Add black beans (if using), sliced jalapeños, diced tomatoes, and sliced green onions evenly over the cheese.
  9. Bake in the preheated oven for 8-10 minutes until cheese is melted and bubbly.
  10. Remove from oven and immediately sprinkle chopped cilantro on top.
  11. Drizzle with sour cream and spoon salsa over or serve salsa on the side.
  12. Serve hot and enjoy.

Notes

If chips get soggy, reheat in oven for a few minutes to crisp. Cover tray loosely with foil for first 5 minutes of baking for extra melty cheese. For vegetarian option, substitute beef with seasoned black beans or lentils. Use vegan cheese and sour cream for dairy-free version. Avoid microwave reheating to prevent soggy chips.
