  • 1 bunch fresh asparagus (about 1 pound)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 large lemon (zest and juice separated)

  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Position the oven rack in the center.
  2. Trim the woody ends off the asparagus (about 1-2 inches). Toss with olive oil, salt, and pepper. Spread in a single layer on one side of a rimmed baking sheet.
  3. In a small saucepan over low heat or microwave-safe bowl, melt the butter. Stir in minced garlic and cook gently for 1-2 minutes until fragrant but not browned. Remove from heat and stir in lemon zest and half the lemon juice.
  4. Pat the halibut fillets dry with paper towels. Season both sides with salt and pepper.
  5. Place the halibut fillets on the empty side of the baking sheet, skin-side down if applicable.
  6. Brush the garlic butter sauce generously over the halibut fillets, reserving some sauce to drizzle over the asparagus.
  7. Drizzle the remaining lemon juice over the asparagus and halibut.
  8. Bake for 12-15 minutes or until the halibut flakes easily with a fork and asparagus is tender-crisp. Thicker fillets may require up to 18 minutes.
  9. Optional: Sprinkle fresh parsley over the fish and asparagus before serving.

Pat halibut dry before seasoning to ensure a flaky texture. Keep heat low when melting butter with garlic to avoid burning. Slice thicker asparagus stalks in half lengthwise for even roasting. Let fish rest a few minutes after baking to redistribute juices. For dairy-free, substitute butter with coconut oil or vegan butter. You can swap asparagus for green beans or broccolini.
