  • 4 tablespoons unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together melted butter, minced garlic, lemon juice, olive oil, smoked paprika, salt, and black pepper (about 5 minutes).
  2. Marinate the shrimp: Add peeled and deveined shrimp to the marinade. Toss gently to coat evenly. Cover and refrigerate for 15 to 30 minutes. Do not marinate longer than 30 minutes.
  3. Preheat the grill to medium-high heat (around 400°F).
  4. Thread 4 to 5 shrimp per skewer, piercing through the tail and thicker part near the head, leaving space between shrimp.
  5. Grill the shrimp skewers for 2-3 minutes per side, flipping once, until shrimp turn opaque with a slight char (total 4-6 minutes).
  6. Optionally brush skewers with leftover garlic butter marinade during grilling for extra flavor.
  7. Transfer skewers to a plate, sprinkle with chopped parsley, and serve immediately with lemon wedges if desired.

Notes

Do not marinate shrimp longer than 30 minutes to avoid ‘cooking’ the shrimp with lemon juice. Use metal skewers for even cooking. Watch shrimp color change from translucent to opaque to avoid overcooking. Rest shrimp 2-3 minutes before serving to redistribute juices.
