A quick and easy grilled pineapple recipe with a sweet and smoky brown sugar glaze, perfect for summer BBQs and gatherings.

Ingredients

Scale
  • 1 medium fresh pineapple, peeled, cored, and cut into 1-inch thick rings or spears
  • ½ cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon ground cinnamon
  • A pinch of ground nutmeg (optional)
  • 1 tablespoon fresh lime juice
  • A small pinch of salt
  • ½ teaspoon vanilla extract (optional)
  • Non-stick cooking spray or oil for grilling

Instructions

  1. Peel and core the pineapple, then slice it into 1-inch thick rings or spears.
  2. In a small mixing bowl, combine brown sugar, melted butter, ground cinnamon, nutmeg, lime juice, salt, and vanilla extract if using. Whisk until smooth and glossy.
  3. Preheat the grill to medium-high heat (about 375°F/190°C). Lightly grease the grill grates with non-stick spray or oil.
  4. Brush each pineapple slice generously with the brown sugar glaze on both sides.
  5. Place the pineapple slices on the grill and cook for about 3-4 minutes per side until grill marks appear and the glaze caramelizes, brushing with more glaze as you flip.
  6. Use tongs to flip the pineapple gently and continue grilling for a total of 8-10 minutes.
  7. Remove from grill when pineapple is tender and caramelized but still holds its shape. Let rest for 2 minutes before serving.

Notes

Use coconut oil instead of butter for a vegan version. If pineapple browns too fast, move slices to a cooler part of the grill. For a spicy twist, add chili powder to the glaze. Can be grilled on a grill pan or broiler if no grill is available.
