Refreshing Firecracker Popsicles with layered berry flavors offer a colorful, fun, and healthy summer treat with distinct sweet-tart layers of strawberries, blueberries, and raspberries.

Ingredients

  • Strawberries, hulled and halved (fresh or frozen)
  • Blueberries (fresh or frozen)
  • Raspberries (fresh preferred, frozen if needed)
  • Honey or maple syrup, about 2 tablespoons total (adjust to taste)
  • Fresh lemon juice, about 1 tablespoon
  • Water, about ½ cup
  • Optional: mint leaves (for a refreshing twist)

Instructions

  1. Rinse all berries well.
  2. Blend strawberries with 2 teaspoons honey and 2 tablespoons water until smooth. Pour into a bowl and rinse the blender.
  3. Pour strawberry puree into popsicle molds, filling about ⅓ of each. Freeze for 30-40 minutes until firm but not rock solid.
  4. Blend blueberries with 1 teaspoon honey, 1 tablespoon lemon juice, and 2 tablespoons water. Pour gently over the frozen strawberry layer. Freeze again for 30-40 minutes.
  5. Blend raspberries with 1 teaspoon honey, optional mint leaves, and 2 tablespoons water. Pour over the blueberry layer carefully. Freeze for at least 4 hours or until fully solid.
  6. To release popsicles, run warm water briefly over the mold’s outside. Serve immediately.

Notes

Freeze each layer until firm but not rock solid to ensure layers stick without mixing. Pour each puree slowly over the back of a spoon or along the side of the mold to avoid breaking the frozen layer. For smoother popsicles, strain purees to remove seeds, especially raspberries. Store popsicles in airtight containers or wrap molds tightly to prevent freezer burn. Popsicles keep well up to 2 weeks but are best within a few days.
