  • 6 ounces smoked salmon, thinly sliced
  • 4 ounces cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • Zest of 1 lemon
  • 1 teaspoon fresh lemon juice (optional)
  • 1 tablespoon capers, drained (optional)
  • Freshly ground black pepper, to taste
  • Sea salt, light sprinkle (optional)

Instructions

  1. Rinse the cucumber well and pat dry. Slice into 1/4-inch thick rounds (about 12-15 slices). Scoop out seeds if large to avoid sogginess.
  2. Lay cucumber slices on a tray or plate, lightly sprinkle with sea salt, and let sit for 5-10 minutes. Blot with paper towels to remove excess moisture.
  3. In a medium bowl, combine softened cream cheese, chopped dill, lemon zest, and lemon juice. Mix until smooth and evenly blended.
  4. Using a small spoon or spreader, dollop about 1 teaspoon of the cream cheese mixture onto each cucumber slice and spread evenly.
  5. Tear or fold thin slices of smoked salmon into bite-sized pieces (about 1 tablespoon) and place one piece atop each cucumber slice.
  6. If using, scatter 1-2 capers on each bite and finish with freshly ground black pepper. Garnish with a small sprig of dill or a thin lemon twist if desired.
  7. Serve immediately or cover loosely with plastic wrap and refrigerate up to 4 hours. Bring to room temperature for 10 minutes before serving.

Notes

Softening cream cheese before mixing helps achieve a smooth spread. Salting and blotting cucumber slices prevents sogginess. Use cold smoked salmon for best texture. Assemble no more than 4 hours ahead to maintain freshness. Optional toasting of rye or pumpernickel bread adds texture.
