This creamy, spicy, and utterly addictive buffalo chicken dip is made in the slow cooker with simple pantry ingredients. Perfect for game day, potlucks, or any gathering, it’s a set-it-and-forget-it recipe that always disappears first.

  • 2 cups cooked chicken, shredded (rotisserie, leftover, or canned, well-drained)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese (sharp cheddar, Mexican blend, or pepper jack)
  • 1 packet ranch seasoning mix
  • Optional garnishes: chopped green onions, crumbled blue cheese, extra hot sauce

Instructions

  1. Soften the cream cheese: Remove from fridge 30 minutes before starting. If forgotten, microwave in 10-second bursts until soft but not melted.
  2. Shred the chicken: If using rotisserie chicken, pull meat off bones and shred with two forks to get about 2 cups. If using canned chicken, drain well and fluff with a fork. Set aside.
  3. Mix the base: In a large mixing bowl, combine softened cream cheese, buffalo hot sauce, ranch dressing, and ranch seasoning mix. Use a hand mixer on low speed (or a whisk) until smooth and well combined, forming a thick, pale orange paste.
  4. Add the chicken and cheese: Fold in the shredded chicken and half of the shredded cheddar cheese. Stir until evenly distributed. The mixture will be thick and chunky.
  5. Transfer to slow cooker: Scrape the mixture into a 3-4 quart slow cooker and spread into an even layer. Sprinkle the remaining cheddar cheese on top. Do not stir.
  6. Cook low and slow: Cover and cook on LOW for 2 hours. Do not lift the lid during the first hour. After 2 hours, give a gentle stir. The dip should be hot, bubbly, and creamy.
  7. Keep warm: Switch to WARM setting if not serving immediately. The dip can stay on warm for up to 3 hours, stirring every 30 minutes.

Notes

For best results, use full-fat cream cheese softened to room temperature. Do not overcook on HIGH to avoid grainy texture. The dip can be made a day ahead and reheated; flavors meld and improve. To transport, let cool slightly and secure lid with a rubber band or tape.
