These sheet pan BBQ chicken fajitas are a quick and easy weeknight dinner, featuring smoky-sweet caramelized chicken and tender bell peppers, all roasted on a single pan in under 30 minutes.

  • 1.5 lbs (680g) boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers (mixed colors), seeded and sliced into thin strips
  • 1 large red onion, sliced into thin wedges
  • 1 cup (240ml) BBQ sauce (e.g., Sweet Baby Ray’s)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 810 small flour or corn tortillas, warmed
  • Optional toppings: sour cream, shredded cheese, fresh cilantro, diced avocado, lime wedges, pickled jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil. Place the empty pan in the oven while it preheats.
  2. Slice the chicken breasts into thin strips, about ½ inch thick. Slice the bell peppers into thin strips, about ¼ inch wide. Slice the red onion into thin wedges, separating the layers.
  3. In a large mixing bowl, whisk together the BBQ sauce, olive oil, smoked paprika, garlic powder, salt, and black pepper.
  4. Add the sliced chicken, bell peppers, and red onion to the bowl with the sauce. Toss until every piece is well coated.
  5. Carefully remove the hot sheet pan from the oven. Spread the chicken and vegetables in a single, even layer.
  6. Roast for 15 minutes.
  7. Remove the pan from the oven. Use tongs to stir everything, flipping the chicken pieces. Return the pan to the oven and switch to the broil setting. Broil for 3-5 minutes, watching closely, until the chicken is charred at the edges and the sauce is sticky and bubbling. The internal temperature of the chicken should reach 165°F (74°C).
  8. Remove the pan from the oven and let it rest for 2-3 minutes.
  9. While the fajitas rest, warm the tortillas by wrapping them in a damp paper towel and microwaving for 30 seconds, or heating in a dry skillet over medium heat for about 15 seconds per side.
  10. Spoon the chicken and vegetables onto the warm tortillas. Top with your favorite garnishes and serve immediately.

Notes

Preheat the sheet pan for best caramelization. Cut chicken and vegetables uniformly for even cooking. Watch the broiler closely to prevent burning. Let the fajitas rest before serving to keep the chicken tender.
