  • 1 teaspoon fresh thyme, chopped

Instructions

  1. Preheat your grill to medium-high heat, about 400°F (200°C), or preheat a grill pan on the stove over medium-high heat.
  2. Rinse and dry all vegetables thoroughly. Trim asparagus ends, peel baby carrots if needed, and cut bell peppers into 1-inch strips. Ensure all vegetables are roughly the same size for even cooking.
  3. In a large mixing bowl, combine olive oil, minced garlic, sea salt, and black pepper. Add all vegetables and toss gently until well coated.
  4. Oil the grill grates lightly using a brush or paper towel dipped in oil to prevent sticking.
  5. Spread the vegetables in a single layer on the grill. Cook for about 3-4 minutes per side, turning carefully with tongs, until grill marks appear and vegetables are tender-crisp.
  6. Check doneness: asparagus should be bright green and tender, snap peas slightly blistered but still crunchy, and carrots softened with a slight bite.
  7. Remove vegetables from the grill and transfer to a serving dish. Drizzle with fresh lemon juice and sprinkle with chopped thyme. Toss gently to combine flavors.
  8. Serve immediately hot off the grill, or let cool to room temperature if preferred.
