  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract

  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch rimmed baking sheet with parchment paper.
  2. In a large bowl, cream together 1 cup softened butter and 1 cup granulated sugar until light and fluffy, about 3 minutes with an electric mixer.
  3. Add the egg and 1 teaspoon vanilla extract to the butter mixture and mix until combined.
  4. In a separate bowl, whisk together 2 ¾ cups flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low until just combined. The dough should be soft but not sticky; add more flour if needed.
  6. Transfer the dough to the prepared pan and press evenly into a rectangle about ¼ inch thick, smoothing the edges.
  7. Bake for 18-20 minutes or until edges are golden brown and center looks set but pale. Remove from oven and cool completely on a wire rack.
  8. While the crust cools, beat together 8 oz cream cheese and ½ cup butter until smooth. Gradually add 1 cup powdered sugar and 1 teaspoon vanilla, beating until fluffy and creamy.
  9. Spread the cream cheese frosting evenly over the cooled crust, about ¼ inch thick.
  10. Arrange fruit in a flag pattern: place a rectangular cluster of blueberries in the top left corner, then create alternating horizontal stripes of sliced strawberries and raspberries for the red and white stripes.
  11. Garnish with fresh mint leaves if desired. Chill the fruit pizza in the fridge for about 30 minutes before serving to let flavors meld.
