Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup of old-fashioned rolled oats, 2 tablespoons of ground flaxseed, and a pinch of salt. If using shredded coconut or dried fruit, add them now. Stir to distribute evenly.
  2. Add the wet ingredients: Measure out ½ cup of creamy peanut butter and ⅓ cup of honey. Add them to the bowl along with 1 teaspoon of vanilla extract.
  3. Mix until fully combined: Stir everything together with a spoon or spatula. Use a firm, consistent motion and scrape down the sides. After about 45 to 60 seconds, the mixture will come together into a thick, cohesive dough.
  4. Let the mixture rest: Cover the bowl with a clean kitchen towel or plastic wrap and let it sit at room temperature for 5 to 10 minutes. This allows the oats to absorb the liquid ingredients fully.
  5. Fold in the chocolate chips: After the mixture has rested, add ¼ cup of dark chocolate chips. Fold them in gently until evenly distributed.
  6. Portion the mixture: Line a baking sheet or large plate with parchment paper or wax paper. Using a small cookie scoop or spoon, scoop out portions of about 1 to 1½ tablespoons each. You should get 16 to 18 bites.
  7. Roll into balls: Lightly wet your hands with water to prevent sticking. Roll each portion between your palms into smooth, round balls. Place each finished ball onto the prepared baking sheet.
  8. Chill before serving: Transfer the baking sheet to the refrigerator and let the energy bites chill for at least 30 minutes. This firms them up so they hold their shape.
