Instructions

  1. Preheat your oven to 400°F (200°C). Give it a full 10 minutes to come to temperature.
  2. Slice your bagels in half if they aren’t pre-split. Lay the halves cut-side up on your baking sheet. If using parchment paper, lay it down now.
  3. Optional but worth it: Brush the cut sides with olive oil. Use a pastry brush or rub it on with your fingers—just a light coat.
  4. Pre-toast the bagels for 3-4 minutes. Pop the baking sheet in the oven and let the bagels toast just until the edges start turning light golden.
  5. Remove the baking sheet from the oven. Leave the oven on. Let the bagels cool for about a minute on the counter.
  6. Spread about 1 tablespoon of pizza sauce on each bagel half using the back of a spoon, leaving a small border around the edge.
  7. Sprinkle shredded mozzarella over the sauce—about 1 1/2 to 2 tablespoons per half. Spread in an even layer.
  8. Arrange 3-4 mini pepperoni slices on each bagel half. Press them gently into the cheese.
  9. Optional: Sprinkle a pinch of dried oregano and red pepper flakes over the top.
  10. Bake for 6-8 minutes, or until the cheese is melted, bubbly, and starting to brown in spots. The edges of the bagel should be deep golden and the pepperoni slightly crispy.
  11. Remove from the oven and let rest for 2 minutes. Transfer to a cooling rack or plate.
  12. Serve warm.
