A quick and flavorful Korean beef bowl topped with a crunchy sesame and shallot mix, perfect for busy weeknights and casual dinners.

Ingredients

Scale
  • 1 lb (450 g) ground beef (85% lean)
  • 1/4 cup (60 ml) soy sauce (low-sodium preferred)
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 23 green onions, thinly sliced
  • 4 cups (960 ml) cooked jasmine or brown rice
  • 2 tbsp toasted sesame seeds
  • 1 medium shallot, thinly sliced and fried until crispy
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp rice vinegar (optional)

Instructions

  1. Cook 2 cups (480 ml) uncooked jasmine or brown rice according to package instructions to yield about 4 cups (960 ml) cooked rice. Keep warm.
  2. Prepare the sesame crunch: Toast 2 tablespoons sesame seeds in a small dry skillet over medium heat for 2-3 minutes until golden and fragrant. Remove and set aside.
  3. In the same skillet, fry thinly sliced shallots in a little oil until crispy and browned, about 3-4 minutes. Drain on paper towels.
  4. Mix toasted sesame seeds and crispy shallots in a small bowl; set aside.
  5. Make the sauce: Whisk together soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and rice vinegar (if using) in a small bowl until sugar dissolves.
  6. Heat a large skillet over medium-high heat. Add ground beef and cook, stirring and breaking apart, until browned and cooked through, about 6-8 minutes. Drain excess fat if needed.
  7. Pour the sauce over the cooked beef and stir well to coat. Cook for another 2-3 minutes until sauce thickens slightly.
  8. Assemble bowls by spooning warm rice into bowls, topping with saucy beef, then sprinkling sesame crunch mixture and sliced green onions on top.
  9. Add red pepper flakes if desired for heat.

Notes

Do not rush browning the beef to develop caramelization and texture. Toast sesame seeds carefully to avoid burning. Fry shallots until golden for best crunch. Sauce sweetness can be adjusted to taste. Leftover sesame crunch keeps 3-4 days in airtight container. For gluten-free, substitute soy sauce with tamari.
