  • 1 pound fresh green beans, trimmed and washed
  • 3 tablespoons unsalted butter
  • 3 cloves fresh garlic, minced
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice (optional)
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon olive oil

Instructions

  1. Trim the ends off about 1 pound of fresh green beans and wash them thoroughly in cold water. Drain well.
  2. Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes until bright green and just tender. Immediately drain and plunge into ice water to stop cooking. Drain again and set aside.
  3. Peel and finely mince 3 cloves of fresh garlic.
  4. Place a large skillet over medium heat and melt 3 tablespoons of unsalted butter along with 1 tablespoon of olive oil.
  5. Add minced garlic and sauté gently for 1-2 minutes until fragrant but not browned.
  6. Add the blanched green beans to the skillet. Stir and toss to coat thoroughly in the garlic butter. Cook for 3-4 minutes until heated through and the beans are tender-crisp.
  7. Sprinkle 1 teaspoon salt and ½ teaspoon freshly ground black pepper over the beans. Stir well to combine.
  8. Optional: Squeeze 1 tablespoon fresh lemon juice over the beans and add a pinch of red pepper flakes. Toss again.
  9. Serve immediately while warm.

Avoid overcooking the green beans to keep them crisp-tender. Blanching preserves vibrant color and texture. Use fresh garlic for best flavor and add a splash of olive oil to prevent butter from burning. For dairy-free options, substitute butter with vegan margarine or coconut oil.
