A quick and easy recipe for individual walking tacos packed with seasoned ground beef, crunchy corn chips, and fresh toppings, perfect for parties or casual meals.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (or your own blend of chili powder, cumin, paprika, and oregano)
  • 1/2 cup water
  • Individual small bags of sturdy corn chips (like Fritos or Doritos; Fritos preferred)
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup diced tomatoes or pico de gallo
  • 1 jalapeño, sliced thin (optional)
  • 1 lime, cut into wedges

Instructions

  1. Heat a large skillet over medium heat. Add ground beef and chopped onion. Stir regularly to break up the meat as it cooks, about 5-7 minutes until beef is browned and onions are softened.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Sprinkle in taco seasoning mix, then pour in 1/2 cup water. Stir well to combine.
  4. Reduce heat to low and simmer for 5 minutes, stirring occasionally, until mixture thickens and flavors meld.
  5. Taste and adjust seasoning with salt or extra spices if needed.
  6. While meat simmers, dice tomatoes or prepare pico de gallo, shred cheese, slice jalapeños, and chop cilantro. Cut lime into wedges.
  7. Open each individual bag of corn chips carefully without tearing.
  8. Spoon a generous amount of cooked meat mixture directly into the bag over the chips.
  9. Add shredded cheese on top so it melts a bit with the warm meat.
  10. Add salsa, a dollop of sour cream or Greek yogurt, and preferred fresh toppings like tomatoes, jalapeños, and cilantro.
  11. Squeeze lime juice over the top just before eating.
  12. Serve with napkins and a fork or spoon to enjoy on the go.

Notes

For extra flair, pop assembled bags in a 350°F oven for 3-5 minutes to melt cheese and warm chips. Drain excess grease from beef to avoid soggy tacos. Prepare toppings while meat simmers for efficiency. Store meat filling separately if making ahead. Use plant-based or lean meat alternatives for dietary preferences.
