  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning (store-bought or homemade blend)
  • Salt and pepper, to taste
  • 1/4 cup water or beef broth
  • Individual bags of crunchy corn chips (about 2 oz each)
  • 1 cup shredded cheddar cheese (or Mexican cheese blend)
  • 1/2 cup salsa
  • 1/4 cup sour cream or Greek yogurt
  • 1/2 cup diced fresh tomatoes
  • 1/4 cup chopped green onions or cilantro
  • Optional: sliced jalapeños or avocado slices

Instructions

  1. Heat a non-stick skillet over medium heat. Add chopped onion and minced garlic, sauté for about 2 minutes until fragrant and translucent.
  2. Add ground beef to the skillet, breaking it up with a spatula. Cook for 5 to 7 minutes until browned and no longer pink, stirring occasionally.
  3. Sprinkle taco seasoning evenly over the beef. Pour in water or beef broth. Stir well and simmer for 3 to 5 minutes until liquid reduces and meat is flavorful but not dry.
  4. Add salt and pepper to taste. Remove from heat and set aside.
  5. Dice fresh tomatoes and chop green onions or cilantro. Shred cheese if not pre-shredded.
  6. Carefully open individual chip bags. Spoon a generous portion of seasoned meat into each bag.
  7. Sprinkle shredded cheese over the meat, followed by diced tomatoes and green onions.
  8. Add a dollop of sour cream or Greek yogurt and a spoonful of salsa on top.
  9. Insert a fork or small spoon into each bag and serve immediately.

Notes

Do not overfill chip bags to avoid breaking. Keep about 1/3 of the bag empty at the top for easier handling. Assemble just before serving to keep chips crunchy. For a vegetarian version, substitute meat with seasoned black beans or lentils. Use gluten-free chips and seasoning for gluten-free diet. Sour cream can be swapped with dairy-free yogurt for dairy-sensitive eaters.
