  • 1 lb kielbasa sausage, sliced into 1/2-inch rounds (smoked kielbasa like Polish or garlic-flavored recommended)
  • 1 red bell pepper, cut into bite-sized chunks
  • 1 green bell pepper, cut into chunks
  • 1 medium red onion, sliced into wedges
  • 1 medium zucchini, sliced into thick half-moons
  • 1 lb baby potatoes, halved (Yukon gold or red potatoes)
  • 3 garlic cloves, minced or thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning (or dried oregano and basil)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the baby potatoes in half, slice the zucchini into thick half-moons, cut the bell peppers into chunks, and slice the red onion into wedges. Slice the kielbasa into 1/2-inch rounds.
  3. In a large mixing bowl, combine the chopped vegetables and kielbasa. Add minced garlic, olive oil, smoked paprika, Italian seasoning, salt, and black pepper. Toss everything thoroughly to coat.
  4. Line a large rimmed baking sheet with parchment paper or a silicone baking mat. Spread the mixture evenly in a single layer, ensuring pieces aren’t crowded.
  5. Place the sheet pan in the preheated oven and roast for 25 minutes. Halfway through (around 12 minutes), use tongs or a spatula to flip and stir the ingredients for even cooking and browning.
  6. After 25 minutes, check the potatoes for tenderness by piercing with a fork. If tender and kielbasa edges are crispy, remove from oven. If not, roast for an additional 5-10 minutes, checking frequently to avoid burning.
  7. Remove from oven and sprinkle freshly chopped parsley over the top. Let rest for a few minutes before serving.

Notes

Do not crowd the pan to ensure crispiness. Flip the ingredients halfway through cooking for even browning. Use high heat (425°F) for caramelization without drying out the kielbasa. Let the dish rest a few minutes after roasting to allow flavors to settle. For extra crispiness, broil for 2-3 minutes at the end but watch closely to avoid burning. Leftovers reheat best in the oven at 350°F for 10-15 minutes to maintain texture.
