  • 4 bone-in, skin-on chicken thighs
  • 1 bunch asparagus, trimmed
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat chicken thighs dry with paper towels. Season generously with salt, pepper, and dried oregano. Set aside.
  3. Trim woody ends off asparagus and toss with a pinch of salt and 1 tablespoon olive oil. Set aside.
  4. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. When shimmering, place chicken thighs skin-side down. Sear without moving for 6-7 minutes until skin is golden and crispy.
  5. Flip chicken thighs skin-side up. Scatter minced garlic around the pan and add asparagus. Drizzle lemon juice over everything and sprinkle lemon zest on top of the chicken.
  6. Transfer skillet to the preheated oven. Roast for 15-18 minutes until chicken reaches 165°F (74°C) internal temperature and asparagus is tender but crisp.
  7. Remove from oven and let rest for 5 minutes to allow juices to redistribute.
  8. Optional: Sprinkle red pepper flakes or fresh parsley before serving.

Notes

Dry chicken skin thoroughly before seasoning to ensure maximum crispiness. If asparagus cooks faster than chicken, remove early and keep warm under foil. Use a thermometer to check chicken doneness at 165°F (74°C). Reheat leftovers in a skillet over medium heat to restore crispiness.
