  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680 g)
  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper if desired for easy cleanup.
  2. Peel and cut the sweet potatoes into roughly 1-inch cubes. Toss in a mixing bowl with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and half the smoked paprika and garlic powder.
  3. Spread the sweet potatoes evenly on one side of the baking sheet.
  4. Pat the chicken thighs dry with paper towels. In the same bowl, drizzle 2 tablespoons olive oil over the chicken. Sprinkle remaining smoked paprika, garlic powder, onion powder, salt, and pepper. Toss gently to coat.
  5. Arrange the chicken thighs skin-side up on the other half of the baking sheet, ensuring they do not overlap or touch the sweet potatoes.
  6. Roast in the oven for 25 to 30 minutes. Halfway through (around 15 minutes), rotate the pan and turn the sweet potatoes with tongs for even roasting. Do not flip the chicken.
  7. Check for doneness: chicken skin should be golden brown and crispy, and internal temperature should reach 165°F (74°C). Sweet potatoes should be tender with caramelized edges.
  8. Optional: Broil for 2-3 minutes at the end for extra crispy skin, watching closely to prevent burning.
  9. Remove from oven and let rest for 5 minutes. Sprinkle with fresh parsley and squeeze lemon wedges over the top if desired.

Notes

Patting the chicken dry before seasoning is crucial for crispy skin. Avoid overcrowding the pan to prevent steaming the sweet potatoes. Broiling at the end can enhance skin crispiness but watch carefully to avoid burning. Reheat leftovers in the oven to maintain crispiness; avoid microwaving.
