  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and black pepper to taste
  • A pinch of red pepper flakes (optional)

Instructions

  1. Prepare the zucchini noodles using a spiralizer or vegetable peeler. Set aside on a paper towel to absorb excess moisture (about 10 minutes).
  2. In a mixing bowl, combine softened cream cheese, heavy cream, and freshly grated Parmesan. Stir until smooth and creamy. Season with salt and black pepper (5 minutes).
  3. Heat olive oil in a large non-stick skillet over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant but not browned.
  4. Add zucchini noodles to the skillet and sauté gently for 3-4 minutes, stirring occasionally, until noodles are tender but still al dente.
  5. Lower the heat and add the creamy garlic sauce to the skillet. Toss gently to coat noodles evenly. Cook for another 2-3 minutes until warmed through. Add a tablespoon of pasta water or milk if sauce is too thick.
  6. Remove from heat. Sprinkle with chopped fresh parsley and red pepper flakes if desired. Adjust salt and pepper to taste before serving.

Notes

Drain zucchini noodles on paper towels before cooking to prevent sogginess. Use moderate heat to avoid burning garlic. Mix cream cheese and Parmesan at room temperature for a smooth sauce. Avoid overcooking noodles to keep them al dente. For dairy-free version, substitute cream cheese and heavy cream with coconut cream and dairy-free cream cheese.
