  • 8 oz (227 g) cream cheese, softened (full-fat recommended)
  • 2 to 3 cups (240 to 360 g) powdered sugar, sifted
  • 1 teaspoon (5 ml) vanilla extract

Instructions

  1. Remove the cream cheese from the fridge about 30 minutes before starting to soften.
  2. In a mixing bowl, combine the softened cream cheese and 2 cups (240 g) of sifted powdered sugar.
  3. Add 1 teaspoon (5 ml) of vanilla extract.
  4. Mix on medium speed using an electric mixer for 2 to 3 minutes until smooth and fluffy, scraping down the sides occasionally.
  5. If frosting is too soft, gradually add more powdered sugar (about 1/4 cup or 30 g at a time) until desired consistency is reached.
  6. If frosting is too thick, add 1 to 2 teaspoons of milk or cream and mix briefly to loosen.
  7. Check that the frosting holds soft peaks and is creamy and smooth.
  8. Spread the frosting evenly over completely cooled sugar cookies using a butter knife or offset spatula. Chill frosting slightly before spreading for a neater finish.

Notes

Use full-fat cream cheese for best texture. Sift powdered sugar to avoid lumps. Keep cream cheese at room temperature before mixing. Chill frosting before spreading on warm cookies to prevent melting. Leftover frosting can be stored in the fridge for up to one week and stirred before use. For piping, add extra powdered sugar to thicken.
