  • 12 oz (340 g) white chocolate chips or wafers (recommend Ghirardelli or Callebaut)
  • 1 cup (50 g) pastel-colored mini marshmallows
  • 1 cup (150 g) assorted Easter candy pieces (candy-coated chocolate eggs, pastel M&Ms, jelly beans)
  • ¼ cup (30 g) spring-themed sprinkles (pastel nonpareils, sugar pearls, flower shapes)
  • 2 tbsp crushed freeze-dried strawberries (optional)
  • 1 tbsp (14 g) unsalted butter (optional)
  • Pinch of sea salt

Instructions

  1. Line a 9×13-inch baking sheet with parchment paper or a silicone baking mat.
  2. Melt the white chocolate chips and butter (if using) in a microwave-safe bowl in 20-second intervals, stirring well after each, until smooth and glossy. Alternatively, melt using a double boiler over simmering water.
  3. Add a pinch of sea salt to the melted chocolate and stir well.
  4. Pour the melted chocolate onto the prepared baking sheet and spread evenly to about ¼ inch (6 mm) thickness using a spatula.
  5. Sprinkle the mini marshmallows, assorted Easter candies, sprinkles, and crushed freeze-dried strawberries evenly over the chocolate. Press down gently to ensure they stick.
  6. Place the baking sheet in the refrigerator for at least 30 minutes or until the chocolate hardens completely.
  7. Remove from the fridge and peel the bark off the parchment. Break into bite-sized pieces or irregular chunks.
  8. Serve immediately or store in an airtight container in a cool place or refrigerator.

Notes

Melt chocolate slowly and stir often to avoid burning. Add toppings while chocolate is warm but not hot to prevent melting. Keep bark about ¼ inch thick for easy breaking. Store in airtight container away from moisture. Let bark sit at room temperature for 10 minutes before breaking if it looks dull. For vegan or dairy-free options, use dairy-free white chocolate and vegan marshmallows. Avoid candies with nuts for nut-free version.
