  • 6 large eggs, beaten (room temperature)
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 1 cup diced cooked bacon, sausage, or ham (optional)
  • 1/2 cup diced bell peppers (red or green)
  • 1/4 cup finely chopped onion (yellow or white), sautéed
  • 1/2 cup rinsed and drained black beans (optional)
  • 1/4 cup salsa (mild or spicy)
  • Salt and pepper to taste
  • 1 tablespoon olive oil for sautéing veggies

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. Heat olive oil in a skillet over medium heat. Add diced onions and bell peppers, cooking until softened, about 5 minutes. If using cooked meat, add it now to warm through. Season lightly with salt and pepper.
  3. In a large bowl, beat 6 large eggs with a pinch of salt and pepper until well combined and slightly frothy.
  4. Pour the eggs into the skillet with the sautéed veggies and meat. Stir gently with a spatula, cooking until eggs are mostly set but still slightly moist, about 3-4 minutes. Remove from heat.
  5. Lay out 4 large flour tortillas on a clean surface. Divide the scrambled egg mixture evenly among the tortillas, placing the filling slightly off center.
  6. Sprinkle about 1/4 cup shredded cheddar cheese over the eggs on each tortilla. Add a spoonful of salsa on top for flavor and moisture.
  7. Fold the sides of the tortilla over the filling, then roll tightly into a burrito shape. Wrap each burrito securely in a sheet of heavy-duty aluminum foil.
  8. Place the foil-wrapped burritos on the prepared baking sheet and bake for 15-18 minutes to melt the cheese and meld flavors without drying out the eggs.
  9. Carefully unwrap the foil (watch out for steam!) and serve hot.

Do not overcook eggs during scrambling; they will finish cooking in the oven. Use heavy-duty foil and wrap packets tightly to trap steam and keep fillings moist without soggy tortillas.
