  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced (about ½ cup)
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup (80ml) low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon lime juice
  • 4 cups (about 200g) shredded romaine or iceberg lettuce
  • 1 cup (150g) cherry tomatoes, halved or quartered
  • 1 cup (120g) shredded cheddar or Mexican blend cheese
  • ½ cup (120ml) sour cream or plain Greek yogurt
  • ½ cup (120ml) salsa
  • 1 avocado, sliced
  • 46 ounces (115-170g) tortilla chips or 4-6 small soft corn tortillas
  • Optional: pickled jalapeños, sliced black olives, fresh cilantro

Instructions

  1. Cook the Aromatics: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Brown the Turkey: Add ground turkey to the skillet. Break it up with a wooden spoon and let it cook undisturbed for 2 minutes to get a brown crust. Continue cooking for 5-6 minutes, breaking up chunks, until fully cooked (165°F/74°C).
  3. Season the Meat: Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and pepper over the turkey. Stir well and cook for 1 minute to toast the spices.
  4. Add Liquid & Tomato Paste: Push meat to one side. Add tomato paste to the empty space and cook for 30 seconds. Pour in chicken broth, stir everything together, and simmer for 2-3 minutes until reduced. Stir in lime juice at the end.
  5. Cool the Meat: Transfer cooked turkey to a shallow bowl and let cool for about 10 minutes at room temperature.
  6. Prep the Veggies: Wash and dry lettuce, then shred or chop into bite-sized pieces. Halve or quarter cherry tomatoes. Slice avocado just before eating or toss with lime juice to prevent browning.
  7. Assemble the Bento Boxes: Divide cooled turkey meat among lunch containers in one compartment. Add shredded lettuce in another, cherry tomatoes in a third. Use small compartments or silicone cups for cheese, sour cream, and salsa. Keep tortilla chips separate to maintain crunch.
  8. Store Properly: Seal containers and refrigerate for up to 4 days. When ready to eat, assemble tacos cold or reheat turkey meat in the microwave for 30-45 seconds. Add avocado and fresh garnishes after reheating.

Notes

Cool the turkey meat completely before packing to avoid condensation and soggy ingredients. For best results, store tortilla chips separately at room temperature. The turkey meat tastes even better on day two or three as flavors meld.
