Decadent Chocolate Cherry Brownies with Silky Ganache

These fudgy chocolate cherry brownies topped with a silky ganache combine rich cocoa, tart cherries, and a glossy chocolate finish for an indulgent yet familiar dessert perfect for any occasion.

  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder (preferably Dutch-processed)
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup (150g) fresh or frozen pitted cherries (if frozen, thaw and drain excess liquid)
  • ¾ cup (180ml) heavy cream
  • 8 ounces (225g) bittersweet chocolate chips or chopped chocolate
  • 2 tablespoons (28g) unsalted butter, room temperature
  • Optional: a pinch of sea salt to finish

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or grease lightly.
  2. In a large bowl, mix melted butter and both sugars until smooth, about 2–3 minutes.
  3. Add eggs one at a time, whisking fully after each addition. Stir in vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Fold dry ingredients gently into wet mixture until just combined; avoid overmixing.
  6. Fold in cherries carefully, patting dry if juicy to prevent excess moisture.
  7. Pour batter evenly into prepared pan and smooth the top.
  8. Bake for 30–35 minutes or until a toothpick inserted near the center comes out with a few moist crumbs.
  9. While brownies bake, heat cream in a small saucepan over medium heat until it just begins to simmer; do not boil.
  10. Remove cream from heat and pour over chopped chocolate in a heatproof bowl. Let sit 2 minutes, then stir gently until smooth and glossy.
  11. Stir in room temperature butter until fully incorporated.
  12. Once brownies are out and slightly cooled (about 15 minutes), pour ganache over the top and spread evenly.
  13. Let brownies cool completely in the pan, then chill for at least 1 hour before slicing.

Notes

Do not overmix the batter to avoid cakey brownies. Use room temperature eggs for smooth batter. If using frozen cherries, thaw and drain well to prevent sogginess. Heat cream just until simmering for smooth ganache. Chill brownies before slicing to keep ganache firm. Optional: add a teaspoon of cherry liqueur to ganache for extra flavor.
