A hearty, comforting stew packed with layers of tender vegetables, savory ground beef, and rich tomato flavor, perfect for chilly evenings or busy schedules.

Ingredients

Scale
  • 1 lb ground beef
  • 4 medium potatoes, peeled and sliced thin
  • 3 medium carrots, peeled and sliced
  • 1 medium onion, diced
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (10.75 oz) tomato soup
  • Salt and pepper to taste

Instructions

  1. Brown the beef: In a skillet, cook the ground beef over medium heat until fully browned. Drain any excess grease.
  2. Layer the ingredients: In your crock pot, layer the ingredients in this order: potatoes, carrots, onion, corn, browned beef, canned tomatoes (undrained), and tomato soup. Sprinkle salt and pepper between layers to season everything evenly.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors have melded together.
  4. Check for seasoning: Before serving, give the stew a taste and adjust the salt and pepper if needed.
  5. Serve: Ladle the stew into bowls and enjoy while hot.

Notes

[‘Layer potatoes on the bottom as they take the longest to cook.’, ‘Browning the beef adds depth of flavor and prevents greasy stew.’, ‘Resist lifting the lid during cooking to maintain heat.’, ‘Double the recipe for freezing; it freezes beautifully for future meals.’, ‘For a thicker stew, mash some potatoes or add a cornstarch slurry during the last 30 minutes of cooking.’]
