  • 2 cups canned salmon, drained and flaked (about 14 oz)
  • 1/2 cup breadcrumbs, plain or seasoned (use gluten-free breadcrumbs if needed)
  • 1 large egg, beaten
  • 1/4 cup chopped parsley and dill
  • 1/4 cup finely diced onion
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a large mixing bowl, combine the flaked salmon, breadcrumbs, beaten egg, chopped herbs, diced onion, minced garlic, lemon juice, salt, and pepper. Mix until well combined but not overly mashed.
  2. Using your hands, shape the mixture into patties about 3 inches in diameter. You should get about 6-8 patties, depending on size.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet, leaving enough space between each one.
  4. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy. Be gentle when flipping to keep them intact.
  5. Transfer the cooked patties to a plate lined with paper towels to drain any excess oil.

Notes

If the mixture feels too wet, add more breadcrumbs. If too dry, add a splash of water or another egg. Don’t overcrowd the skillet to maintain crisp texture.
