  • 812 slices prosciutto (thin, high-quality)
  • 12 tablespoons olive oil (extra virgin preferred)
  • Freshly cracked black pepper, to taste
  • 2 tablespoons grated parmesan cheese (optional)
  • 1 small lemon, cut into wedges (optional)
  • Pinch of flaky sea salt (optional, if prosciutto isn’t very salty)

Instructions

  1. Preheat oven to 425°F (220°C). Rinse asparagus and trim off woody ends (about 1–2 inches from the base). Pat dry.
  2. Gather 3–4 asparagus spears per bundle. Lay a slice of prosciutto flat, place asparagus at one end, and roll tightly to wrap. If prosciutto is wide, cut in half lengthwise.
  3. Line a baking sheet with parchment paper or foil. Place bundles seam-side down, spaced apart. Drizzle with olive oil and sprinkle with black pepper.
  4. Roast for 10–12 minutes, or until prosciutto is golden and crispy and asparagus is tender. For thin spears, check at 8 minutes; for thick, up to 15 minutes.
  5. Remove from oven and immediately sprinkle with parmesan, if using. Squeeze lemon juice over bundles while hot. Let cool for 2–3 minutes before serving.
  6. Transfer bundles to a serving platter using tongs or a spatula. Garnish with extra lemon wedges or fresh herbs if desired.

Notes

For best results, use fresh, thin asparagus and high-quality prosciutto. Dry asparagus thoroughly before wrapping to ensure crispiness. You can prep bundles up to 6 hours ahead and refrigerate before baking. For a vegetarian version, substitute prosciutto with thinly sliced eggplant or zucchini. Air fryer option: cook at 400°F for 7–8 minutes. Avoid overcrowding the baking sheet for maximum crispiness.
