  • 4 oz (115g) sliced ham
  • 4 oz (115g) sliced turkey breast (optional)
  • 4 oz (115g) Swiss cheese, sliced (Gruyère optional)
  • 2 large eggs, room temperature
  • ½ cup (120 ml) whole milk (or dairy-free alternative)
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch of cayenne pepper (optional)
  • 2 tablespoons unsalted butter, softened
  • Raspberry jam (preferably seedless)
  • Powdered sugar for dusting (optional)

Instructions

  1. In a medium bowl, whisk together eggs, milk, Dijon mustard, salt, black pepper, and cayenne pepper until smooth and slightly frothy.
  2. Lay out 4 slices of bread. On each slice, layer 1 oz ham, 1 oz turkey (if using), and 1 oz Swiss cheese. Top with another slice of bread to form sandwiches.
  3. Heat a non-stick skillet over medium heat and add 1 tablespoon butter.
  4. Dip each sandwich into the batter, coating both sides evenly but briefly to avoid sogginess.
  5. Place coated sandwiches in the skillet and cook for 3-4 minutes per side until golden brown and crispy, adding the remaining tablespoon of butter before flipping.
  6. If bread browns too quickly before cheese melts, lower heat and cover pan for a minute.
  7. Remove sandwiches from pan and let rest for a minute.
  8. Dust with powdered sugar if desired and serve with raspberry jam on the side or spread inside.

Notes

Use medium heat to avoid burning bread before cheese melts. Do not soak bread too long in batter to prevent sogginess. Butter browns better than oil for flavor and crust. Let sandwich rest briefly before serving for best melty texture. Can bake at 375°F for 10-12 minutes per side as an alternative.
