  • 1/3 cup (40g) malted milk powder
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (110g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (170g) chocolate chips or chunks (semi-sweet or milk chocolate)
  • Optional: 1/4 teaspoon espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, malted milk powder, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3–4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Slowly add the dry ingredients to the wet mixture, beating just until combined.
  6. Fold in the chocolate chips and espresso powder if using.
  7. Using a cookie scoop or spoon, place heaping tablespoons of dough onto the baking sheets about 2 inches apart.
  8. Bake for 10–12 minutes until edges are set and crisp but centers remain slightly soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

If cookies spread too much, chill dough for 15 minutes before baking. For extra crispiness, bake 1-2 minutes longer but watch carefully to avoid burning. Use a cookie scoop for consistent size and shape. Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. Reheat in a toaster oven for 2–3 minutes to refresh crispness.
