Ingredients

  • Fresh jalapenos
  • Softened cream cheese
  • Shredded cheddar cheese
  • Garlic powder
  • Salt
  • Pepper
  • Beaten eggs
  • All-purpose flour
  • Panko breadcrumbs
  • Vegetable oil

Instructions

  1. Slice the jalapenos in half lengthwise and remove seeds and membranes.
  2. Mix softened cream cheese, shredded cheddar, garlic powder, salt, and pepper in a bowl until smooth.
  3. Spoon the cheese mixture into each jalapeno half, pressing gently to fill completely.
  4. Set up a coating station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third bowl.
  5. Dredge each filled jalapeno first in flour, then in egg, and finally in breadcrumbs, ensuring an even coating.
  6. Heat vegetable oil to 350°F (175°C) in a deep fryer or pot.
  7. Carefully add the jalapenos to the hot oil and fry for 2-3 minutes, or until golden brown. Work in batches to avoid overcrowding.
  8. Use a slotted spoon to transfer the bites to a paper towel-lined plate. Let cool slightly before serving.

Notes

For a healthier option, bake the bites at 375°F (190°C) for 20 minutes, turning halfway through. Customize the filling with diced bacon or green onions for extra flavor.
