  • 2 tablespoons (28g) unsalted butter

  • Vegetable oil (for frying)
  • 1/2 cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 1 can (14 oz / 396g) sweetened condensed milk
  • 1 tablespoon (14g) butter (for sauce)
  • 1 teaspoon vanilla extract (for sauce)
  • Pinch of salt (for sauce)

Instructions

  1. In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat, stirring occasionally.
  2. Remove from heat and immediately stir in all-purpose flour all at once. Stir vigorously until dough forms a ball and pulls away from the sides, about 1-2 minutes. Let cool for 5 minutes.
  3. Transfer dough to a mixing bowl. Add eggs one at a time, mixing well after each addition until dough is glossy, smooth, thick but pipeable.
  4. Mix in vanilla extract until combined.
  5. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
  6. Mix granulated sugar and ground cinnamon in a shallow bowl for coating.
  7. Pipe 1-inch dollops of dough directly into hot oil in batches. Fry 2-3 minutes, turning occasionally, until golden brown and crispy.
  8. Remove churro bites with a slotted spoon and drain on paper towels. While warm, toss in cinnamon sugar to coat evenly.
  9. For the dulce de leche sauce, combine sweetened condensed milk, butter, vanilla extract, and salt in a small saucepan over low heat. Stir frequently and cook 10-15 minutes until thickened and caramel-colored.
  10. Serve churro bites warm with dulce de leche sauce on the side for dipping.

Notes

Use a thermometer to maintain oil temperature at 350°F for best results. Fry in small batches to avoid temperature drops. Toss churro bites in cinnamon sugar immediately after frying while still warm. For a dairy-free sauce, substitute butter with coconut cream and use coconut-based sweetened condensed milk. Leftovers store well at room temperature for 24 hours; reheat in oven to restore crispness.
