  • 2 cups (200g) almond flour
  • 1/4 cup (30g) tapioca starch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg, room temperature
  • 2 tbsp olive oil
  • 3 tbsp cold water
  • Optional: 1/2 tsp garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). If using a pizza stone, place it in the oven to heat.
  2. In a medium bowl, whisk together the almond flour, tapioca starch, baking powder, salt, and optional garlic powder.
  3. In a small bowl, beat the egg, olive oil, and water together.
  4. Pour the wet ingredients into the dry mixture and stir with a spoon until a sticky dough forms. Add more water 1 tsp at a time if too dry.
  5. Line a baking sheet with parchment paper. Transfer the dough onto the paper and press or roll into a roughly 10-inch (25 cm) circle about 1/4-inch (6 mm) thick.
  6. Bake the crust for 12-15 minutes until edges are golden and surface feels set.
  7. Remove the crust from the oven, add your favorite sauce, cheese, and toppings.
  8. Return to the oven and bake for another 10-12 minutes until cheese is melted and bubbly and toppings are cooked.
  9. Let the pizza cool for 5 minutes before slicing to allow the crust to firm up.

Notes

Pre-baking the crust is crucial to avoid sogginess. Use parchment paper for easy cleanup. If crust is soft after baking, broil for 1-2 minutes watching carefully to avoid burning. For vegan option, replace egg with flax egg (1 tbsp ground flaxseed + 3 tbsp water, let sit 5 minutes).
