  • 24 oz (680 g) frozen shredded hash browns, thawed
  • 1 lb (450 g) ground breakfast sausage (gluten-free)
  • 6 large eggs, room temperature
  • 1 cup (240 ml) milk (whole milk preferred, almond milk optional)
  • 2 cups (200 g) shredded cheddar cheese (sharp or mild)
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thaw the frozen hash browns completely, then press out any excess moisture using paper towels.
  3. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground sausage and chopped onion, breaking the sausage apart with a wooden spoon. Cook for 7-9 minutes until browned and cooked through. Drain any excess fat if necessary.
  4. In a large bowl, whisk together 6 large eggs, 1 cup milk, garlic powder, salt, and pepper until smooth and well combined.
  5. Add the drained hash browns, cooked sausage and onions, and 1 ½ cups of shredded cheddar cheese into the egg mixture. Stir gently but thoroughly, making sure everything is evenly distributed.
  6. Lightly grease your 9×13-inch baking dish, then pour in the mixture. Spread it evenly with a spatula. Sprinkle the remaining ½ cup of shredded cheddar on top.
  7. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and crispy and a knife inserted in the center comes out clean.
  8. Let the casserole cool for 5-10 minutes before serving. Sprinkle fresh parsley on top for a pop of color and freshness.

Thaw and squeeze out moisture from hash browns to ensure crispiness. Brown sausage slowly to develop flavor and drain excess fat to avoid greasiness.
