  • 1 teaspoon ground cumin

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • Fresh cilantro, optional for garnish
  • Lemon wedges, optional for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Remove the leaves and stem from the cauliflower and cut it into bite-sized florets.
  3. In a small bowl, combine curry powder, ground cumin, smoked paprika, garlic powder, salt, and black pepper.
  4. In a large mixing bowl, add the cauliflower florets. Drizzle with olive oil and sprinkle the spice mix over them. Toss until evenly coated.
  5. Arrange the cauliflower in a single layer on the prepared baking sheet, ensuring space between florets for even roasting.
  6. Roast in the oven for 25-30 minutes, flipping the florets halfway through. Look for golden-brown edges and a slightly tender texture.
  7. Transfer the roasted cauliflower to a serving dish. Garnish with fresh cilantro and serve with lemon wedges.
