Crispy Caprese Bruschetta Recipe Easy Perfect Appetizer with Sweet Balsamic Glaze

A quick and easy appetizer featuring crispy toasted bread topped with fresh mozzarella, blistered cherry tomatoes, basil, and a sweet balsamic glaze. Perfect for entertaining or a solo snack with vibrant Italian flavors.

  • 8 slices crusty sourdough or rustic baguette bread, about ½ inch thick
  • Extra virgin olive oil, for brushing and drizzling
  • 1 cup (150 g) fresh cherry tomatoes, halved
  • 8 ounces (225 g) fresh mozzarella ball, sliced or torn into bite-sized pieces
  • 1215 fresh basil leaves, torn or whole
  • 1 large garlic clove, halved
  • 3 tablespoons sweet balsamic glaze (store-bought or homemade)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Slice the bread into 8 slices about ½ inch thick. Brush each slice lightly with extra virgin olive oil on both sides.
  3. Arrange the bread slices on the baking sheet and bake for 6-8 minutes, flipping halfway through, until golden and crispy.
  4. Immediately rub the cut side of a garlic clove over each toasted bread slice.
  5. Halve the cherry tomatoes and slice or tear the mozzarella into bite-sized pieces. Tear fresh basil leaves and keep ready.
  6. Assemble the bruschetta by layering mozzarella on each toasted bread slice, then add cherry tomatoes and sprinkle with torn basil.
  7. Season lightly with sea salt and freshly ground black pepper.
  8. Drizzle about 1 teaspoon of sweet balsamic glaze over each slice.
  9. Serve immediately while the bread is warm and crispy and the mozzarella is slightly melted.

Notes

Pat tomatoes dry if watery to prevent soggy bread. Assemble bruschetta just before serving to keep bread crispy. Homemade balsamic glaze can be made by simmering ½ cup balsamic vinegar with 1 tablespoon honey or brown sugar until syrupy. Store toppings and bread separately if saving leftovers.
