  • 8 oz cream cheese, softened
  • 1 cup fresh blueberries, washed and dried
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Stir until smooth and creamy.
  2. Gently fold in the blueberries, ensuring they’re evenly distributed without mashing them.
  3. Lay out an egg roll wrapper on a clean surface. Place a heaping tablespoon of the cream cheese mixture in the center.
  4. Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper tightly, sealing the top edge with a dab of water.
  5. Repeat the process until all the filling is used.
  6. Heat vegetable oil in a frying pan to 350°F (175°C). Carefully add the egg rolls, frying 2-3 at a time to avoid overcrowding.
  7. Cook for 2-3 minutes on each side or until golden brown. Remove and place on paper towels to drain excess oil.
  8. Dust the egg rolls with powdered sugar before serving. Enjoy warm for the best flavor!
